Lemon Bars
LEMON BARS
Ingredients
1 c butter
2 cups flour
½ c confectioners sugar
5 tbsp lemon juice
1 ½ c sugar
4 eggs
½ tsp baking powder
2 tbsp flour
Directions
Mix together the butter, flour, and confectioners sugar. Pat the dough into a 9x13” ungreased pan. Bake at 350 F for 20 minutes. Meanwhile, beat the rest of the ingredients very well. Remove the pan from the oven after 20 minutes and let cool. When cooled pour the second mixture over the bottom layer. Bake an additional 20-25 minutes. Let cool and finally sprinkle a light dusting of confectioners sugar on the top.
Cut into squares and place prettily on a plate.
