Acorn Squash Pie

Ingredients

  • 3 small acorn squash

  • 3 eggs

  • ¾ stick butter

  • ½ c milk

  • ¾ c flour

  • ¾ c sugar

  • 1 tsp Nutmeg

  • 1 tsp Vanilla

  • 1 tsp cinnamon

Directions

Cut the acorn squash in halves and place, cut side down, in pan with 1 inch of water. Bake at 350F for 40 minutes. Cool squash. When cooled, scoop out squash into a bowl. Mix squash with other ingredients with an electric hand mixer until smooth and creamy. Pour mixture into 9” inch round pan. Bake at 350 F for 30-45 minutes.
